The fillet is the leanest, most tender cut of beef, and we trim it of all excess fat and sinew, creating the 'barrel', or 'centre cut'
This leaves an almost fat-free piece of meat, which can either be portioned into individual fillet steaks or cooked whole as a very decadent roasting joint
