We are proud to announce that very soon we will be supplying
Australian Gold Label Beef - the highest grade Australian beef available

We have close associations with Teys, our Australian beef supplier, formed over many years of doing trade with them in the import side of our business. The feedback we have had on their Steak from chefs and industry experts has been fantastic, and we really think you will be as impressed with the new Gold Label steaks as we are.

Teys are based in Queensland, and the cattle are free to roam their huge ranches as they please, meaning they are just about as close to freerange as you could wish for. They live in the natural environment, and are fed on grass, which gives them a depth of flavour which simply can't be matched by grain-fed cattle.

Gold Label beef is dry-aged for 28 days before being portioned, and this time is really needed to age the steak - which develops the flavour and helps to tenderise the meat.

Due to the shipping times needed from Australia, our Gold Label beef will be available as 'VFC' - which is an advanced way of freezing meat, and stands for Very Fast Chill

Invented in Australia and currently being developed in the US in association with Texas Tech University, VFC is a revolutionary way of freezing meat, and means the original texture, colour and flavour is retained once the meat is defrosted, even after being frozen for up to 24 months.

During even the fastest 'blast' methods of freezing meat, ice crystals form within the tissue, and these can damage the texture and flavour of the steak when defrosted.

However, VFC freezes meat in only 10-15% of the time taken to 'blast' freeze. As an example, a 5kg piece of Beef Rump which would take 48 hours to freeze in a 'Blast' freezer could be frozen to -21°C in only 3 hours using VFC. This means the temperature falls so quickly that condensation simply doesn't have time to form, which in turn would result in ice crystals.

We are very proud and excited to be selling Teys' premium Gold Label beef, which will be available in a variety of cuts. Due to the VFC method of freezing it really does taste amazing, and just as it would have done on the day it was cut back at home in Australia.
