Warm Gressingham Duck Salad with Pancetta, Orange and Pomegranate
Gressingham duck breasts taste sensational marinated in orange juice and honey, then grilled with cubes of Pancetta. Serve with a salad of young spinach leaves and chicory with orange segments and pomegranate seeds.

Serves 4
4 Keevil & Keevil Gressingham duck breasts
Finely grated rind and juice of 1 orange
2 tsp clear honey
1 tbsp olive oil
100g Pancetta, chopped
Salad:
4 handfuls baby spinach leaves
2 heads red or green chicory, separated into leaves
2 oranges
50g pomegranate seeds
Dressing:
4 tbsp olive oil
2 tsp Dijon mustard
1 tbsp clear honey
2 tbsp white wine vinegar
Salt and freshly ground black pepper
Put the duck breasts into a shallow glass or plastic dish (not a metal one) and add the orange rind and juice, then spoon in the honey. Toss to coat, then cover, refrigerate and marinate for at least 30 minutes, or overnight.
When ready to cook, heat the oil in a large frying pan and add the Alsace bacon, frying it for 2-3 minutes. Add the duck breasts and cook them over a medium-high heat for 3-4 minutes per side, or until done to your liking. Set aside for 5 minutes to rest, so that the fibres relax for maximum succulence.
Meanwhile, prepare the salad by mixing together the spinach and chicory in a large salad bowl. Remove the peel and pith from the oranges using a sharp, serrated knife and cut into segments, removing all the membrane. Add to the salad bowl with the pomegranate seeds.
Make the dressing by mixing together the olive oil, mustard, honey and vinegar. Season with salt and pepper.
Share the salad between 4 plates or bowls. Slice the duck breasts thinly and arrange on the salads, sprinkling the bacon on top. Spoon over the dressing, then serve at once.
Cook’s tip: Substitute Keevil & Keevil pigeon breasts for the duck breasts for a change. You’ll need 3-4 per person, as they are much smaller than duck breasts, and they require cooking for 2-3 minutes per side. Let them rest for a few minutes before slicing.
