Lamb Racks (pack of 2)

Once the chine and feather bones have been removed, the eye of the meat and the ribs are cleaned of all meat and fat, a method known as French Trimming. This leaves clean bones as well as a leaner and more presentable piece of meat.

They can be roasted whole, or easily separated to form cutlets or smaller racks for single servings
