Description
Confit de Canard (to give it its proper name) is a classic dish of the South West of France, and a real delicacy
Originally intended as a way of storing meat in the days before refrigeration, duck legs are cooked and then covered in their own fat which has rendered off during cooking
This preserves the meat as it prevents air reaching it
To prepare, remove some of the fat and then heat and serve. You could also use them to make a traditional French Cassoulet
The fat you don't use can be stored in the fridge and used to make crispy roast potatoes
