The best loved Jamaican dish, our jerk marinade has plenty of heat from fruity habanero chillies and a fragrant spicy kick from pimenta allspice (also called Jamaican Pepper), mellowed with a little rum.
This marinade is traditionally used for chicken, but is equally tasty with pork or fish.
Place your choice of meat in the bag and seal with the handy zip fastening. Leave to marinade for a minimum 30 minutes, but ideally overnight. Then grill or BBQ until cooked through.
