Roasting joint of rare-breed British beef

Topside (otherwise known as Toprump) is taken from the rump, it's a very lean muscle which is perfect for roasting. However, as it's lean we cover it in a layer of beef fat to help keep it moist while it cooks.

Roast until cooked to your liking, leave to rest for 30 minutes, and serve with Yorkshire Puddings and roast potatoes. Perfect!

Taken from our 28-day-aged, free-range, pasture-fed Red Ruby cattle - this is how beef should taste, with yellow fat and a deep colour.

Our Red Ruby are from the Chapman herd, farmed in and around Sarratt in Hertfordshire, on the edge of the beautiful Chiltern Hills.

They feed only on what they forage, which is a mixture of wild grasses, clover, and herbs, and they're never given cereals or soya to supplement them.

They are Animal Welfare Approved, and certified members of the Pasture Fed Livestock Association which means they have been independently verified as 100% pasture fed.

Pasture fed beef has been proven to be lower in saturated fat and higher in Omega 3 fatty acids, CLA and vitamins B and E than grain and soya fed beef - plus it tastes better, too.

Put into a freezer as soon as possible after delivery, and consume within 12 months or before best before date on packaging.

Defrost in a fridge for 24 hours before cooking, and use within 48 hours.

Once defrosted do not refreeze.

Remove from fridge 1 hour before cooking and allow to come to room temperature.

1kg piece
Cook in an oven pre-heated to 180C (Gas Mark 4) for 60 minutes (medium).

1.5kg piece
Cook in an oven pre-heated to 180C (Gas Mark 4) for 1 hour 15 minutes (medium).

1.9kg piece
Cook in an oven pre-heated to 180C (Gas Mark 4) for 1 hour 40 minutes (medium).

Cook for 10-15 minutes less for rare, or add an extra 10-15 minutes for well-done.

Remove from oven, cover with foil, and leave to rest for 30 minutes before serving.

Delivery Information

We use technologically-advanced packaging , which we have put through vigorous testing to ensure your order arrives with you at the correct temperature.

We deliver from Tuesday to Friday, and also on Saturdays for a surcharge. Delivery is charged at £5, with free delivery for all orders of £75.00 and over, except for Saturday deliveries which have a surcharge of £15. Our deliveries are made between 8am and 4pm, and you can choose to have your order delivered to you at home, to your place of work or to another address you choose.
