Our buffalo steak is from Broughton in Hampshire, and is truly a quality product.
Water buffalo are originally from Asia, and at Broughton they are slow-reared with close attention paid to their welfare.
Our buffalo are reared using natural farming methods, with the highest regard for welfare. They are never given hormones or antibiotics, and the meat they produce is tender and full of flavour.
In the Winter the buffalo shelter in large sheds but as soon as it warms up they are free to wander in the tall grassy pastures around the farm.
Our buffalo is dry-aged for at least 21 days, and this really helps improve the taste and texture of the steaks.
Buffalo steak is similar in taste to beef and can be cooked in the same way, but it is leaner and so a healthier choice.
This selection pack is a brilliant introduction to buffalo and contains one each of our buffalo ribeye, sirloin, and rump steaks.
Ribeye is taken from the forerib of beef, and is characterised by the many veins of fat runnning throughout the meat. This fat melts when the steak is cooked, which adds to the taste and makes this a really flavoursome steak. We recommend cooking at least medium in order to melt the fat.
Sirloin is taken from the loin of the buffalo, and is identified by the layer of fat along the edge of the steak This fat adds to the flavour whilst cooking, and sirloin is otherwise a lean cut with minimal fat.
Rump is taken from the rear of the animal, and is a lean cut, with a thin layer of fat across the top. We recommend cooking rump rare/medium as cooking any more can risk drying the meat out.
