This is a whole boneless Fillet of grass-fed beef, from Australian cattle which are reared on huge plains in an environment which is as open and natural as possible

Also known as tenderloin, our fillets are supplied with the chain off, meaning they are ready to be cut down into fillet steaks, or can also be roasted whole, or made into a beef wellington

The beef fillet is made up of 3 parts - the head, the centre-cut, and the tails.

The head is the largest piece at one end, which can be removed and used as a chateaubriand, best roasted medium-rare and served for 2 to share. The tail is the very tapered part at the thin end, which is best removed and used for stroganoff or posh diced beef. The remainder is the centre-cut, otherwise know as the barrel, which is a cylindrical shape and is the part used for fillet steaks.

Each fillet will provide 10 portions; the Chateaubriand feeds 2, the fillet tails are enough for 3, and the barrel can be cut into 5 average-size 7oz (200g) fillet steaks

Put into a fridge as soon as possible after delivery, and consume within 5 days or before best before date on packaging.

Suitable for home freezing – please freeze on day of delivery and use within 3 months. Defrost fully before cooking.

Remove from fridge 30 minutes before cooking and allow to come to room temperature.

The fillet head at the widest end of the fillet can be roasted whole, and the tails at the thinner end can be used in any recipe for diced beef.

The middle part, or barrel, can be into portions and cooked simply as fillet steaks, or used to make a Beef Wellington.

After cooking, cover and leave to rest in a warm place for at least 20 minutes.

We use technologically-advanced packaging , which we have put through vigorous testing to ensure your order arrives with you at the correct temperature.

We deliver from Tuesday to Friday, and also on Saturdays for a surcharge. Delivery is charged at £5, with free delivery for all orders of £75.00 and over, except for Saturday deliveries which have a surcharge of £15. Our deliveries are made between 8am and 4pm, and you can choose to have your order delivered to you at home, to your place of work or to another address you choose.
