Mallard are the largest type of wild duck, and are one of the most popular British game birds.

Our mallard are from estates across England.

Due to their size one Mallard will feed 2 comfortably.

Tip: Like a standard duck, mallard are fatty birds, and can be greasy. Before cooking, prick the skin all over (especially around the thighs) to allow the fat to escape, rub salt into the skin, and roast on a rack above a roasting tin.

One oven-ready bird supplied.

Each bird weighs a minimum of 650g and will provide 2 adult portions.

Mallard are available fresh from 1st September to 31st January, and frozen at other times of year

Put into a freezer as soon as possible after delivery, and consume within 12 months or before best before date on packaging.

Defrost in a fridge for 24 hours before cooking, and use within 48 hours.

Once defrosted do not refreeze.

Prick the duck skin all over, and season with salt and pepper, inside and out.

Heat a small amount of oil in a medium-hot pan and sear the mallard for 2-3 minutes until browned all over.

Transfer into an oven pre-heated to 240°C (Gas Mark 9) for 15 minutes.

Leave to rest for 5 minutes before serving.

We use technologically-advanced packaging , which we have put through vigorous testing to ensure your order arrives with you at the correct temperature.

We deliver from Tuesday to Friday, and also on Saturdays for a surcharge. Delivery is charged at £5, with free delivery for all orders of £75.00 and over, except for Saturday deliveries which have a surcharge of £15. Our deliveries are made between 8am and 4pm, and you can choose to have your order delivered to you at home, to your place of work or to another address you choose.
