Our wild pheasants are English, and are from estates in Yorkshire and Surrey.

Pheasant is wonderfully tasty and is a healthier alternative to chicken.

It's low in fat and high in protein, iron, Vitamin B6 and Selenium, and it has a rich, intense flavour.

Tip: Pheasants live an active outdoor life, and so the legs may be tough and the breasts very lean. Bear this in mind when cooking - the legs will be better braised, and the breast will need to be basted often.

One oven-ready bird supplied.

Each bird weighs a minimum of 700g and will provide 3-4 adult portions.

Supplied frozen

Pheasants are available fresh from 1st October to 1st February, and frozen at other times of year.

Put into a freezer as soon as possible after delivery, and consume within 12 months or before best before date on packaging.

Defrost in a fridge for 24 hours before cooking, and use within 48 hours.

Once defrosted do not refreeze.

Melt some butter in a medium-hot pan and sear the pheasant legs for 3-5 minutes, and then the breast for another 2-3 minutes, until browned all over.

Transfer into an oven pre-heated to 190°C (Gas Mark 5) for 30 minutes, basting often.

Check the juices run clear, and leave to rest for 10 minutes before serving.
