Squab pigeons are young pigeons which are bred exclusively for eating.
Ours are bred for us in Northern France.
They have a sweeter flavour than Wood Pigeon and are used extensively in high end restaurants.
It's a really versatile bird - perfect for grilling, roasting or pan-frying, and a single bird will serve one person.
Tip: butterfly by cutting almost all the way through the middle of the bird, then coat in herb butter and grill on both sides.
Minimum weight 300g – 1 adult portion.
