Venison is a popular wild meat that’s lower in fat than more widely available farmed meat.
Our venison racks are from New Zealand, and are perhaps the most delicious part and full of flavour.
We take a full rack from the deer's best end, cut it in half to form a 4-bone rack, and then the trim the excess fat and clean or 'French trim' the bones which looks stunning when served.
Tip: crush a few juinper berries into seasoned olive oil and rub into meat before flash roasting.
Each rack weighs a minimum of 550g – 2 adult portions.
